Isolation of Shikimic Acid from Star Aniseed. Shikimic acid plays a key role in the biosynthesis of many important natural products, including aromatic amino acids, alkaloids, phenolics, and phenylpropanoids. The laboratory experiment by Payne and Edmonds describes the isolation of shikimic acid from star aniseed and exposes students to key techniques used in natural products chemistry. Shikimic acid is the Featured Molecule for this month and a model of shikimic acid is shown on the cover.
